Rodrigo Cortés is a former petroleum engineer that, upon the advice of a friend, decided to trade in his life of retirement for coffee farming 18 years ago. His farm, Finca Los Andes in Timaná, Huila, grows a Tabi varietal that undergoes three different periods of fermentation for a span of 72 hours, first with the skin and pulp intact, then washed and de-pulped. Followed by a 20-day sun-drying period, Cortés’ process is thought to emphasize the natural flavors and aromas present in his Tabi.
With blackberry and lime tartness, a cocoa butter richness and a distinct elderflower aroma, La Cuchilla is not only sweet and fragrant but also has a level of complexity that is rarely found in a washed process.
