Efrain Carhuallollo’s coffee comes to us through Cenfrocafe Cooperative, our longest standing cooperative partnership in Peru. Cenfrocafe has grown to become the largest coffee cooperative in Peru, with members located throughout the country. Because of its scope and size, Cenfrocafe offers many coffees, from commodity grade to high-end specialty. Cenfrocafe’s cupping lab works 6 days per week to taste through all of their farmers' deliveries, to evaluate coffees and to sort them according to quality.
Coffees are sorted into a few different categories. Mid-range specialty coffee (think chain coffee retailers) is blended together and sold as “Chasqi.” Higher-end specialty coffee is blended together and called “Apu.” The highest quality coffees they taste aren’t blended at all. Instead they are kept separate and offered as “microlots.” These coffees are quickly transferred to special bags designed to help preserve the coffee's quality and are set-aside in the warehouse for quality-focused buyers.
Last September, we spent time visiting our producer partners in Peru and tasting coffees with Cenfrocafe. Here we identified the Efrain Carhuallollo Microlot as one of their best. This coffee was set aside for us, and we’re excited to be offering it for the first time this year.
