Toby's Estate Coffee Roasters - Colombia Alexander Zapata
Why We Love It
“This coffee is stunning, full of tropical fruits, melons, stonefruits, berries, apples, citrus and florals, with a tactile that is like preserved fruit syrup—dense and sweet. It’s everything I want coffee to taste like.” Jonathan Withers, Green Coffee Buyer
From the breathtaking village of Urrao on the high slopes of western Antioquia comes our third Caturra Chiroso release of 2018—Alexander Zapata, a crescendo conclusion of sweet, tropical flavors to play out the end of summer.
Zapata’s modestly housed micro-lot of 6,000 trees grows on just under two hectares of land situated upwards of 2,200 meters above sea level, where the most perfect conditions for coffee exist. Warm days and cool nights extendmaturation of the fruit, and slow down fermentation to deliver some of the sweetest, most complex coffee on earth.
Like his neighbor Andres Restrepo, Zapata is a young farmer with an unwavering commitment to growing high-quality, small-scale coffee. In a region where many farmers have shifted towards more lucrative crops like avocados, Zapata maintains a steadfast dedication to traditional preparation methods, with careful, attentive ripe pickings; long, controlled fermentation times; and slow drying.
